1 Cup Pohe (Flattened Rice)
Water to wash and soak
1 TBSP Oil
1 TSP Fennel Seeds
1/2 TSP Salt
1/2 TSP Turmeric
1/2 Cup Onions Finely Chopped
1/2 Cup Peas Fresh or Frozen
1 Potato Finely Diced
1/2 Cup Peanuts Raw
1 TSP Green Chili Finely chopped

Indori Pohe – Flattened Rice Breakfast

Poha is number one Indori Street Food. Pohe and Jalebi is the most commonly consumed breakfast in Indore. Pohe is also very common snack anytime of the day, afternoon as well as late-night snack. Indori pohe can be as simple in its ingredients as pohe, water, oil, fennel, green chilies, salt, turmeric, sugar and cilantro. Sev to garnish. In more exotic versions, they load it up with peanuts, potato, onions, corn, carrots, peas, etc. That makes it a more balanced meal. I am demonstrating both ways of making it in a simple recipe. Not to confuse, if you want to make the exotic version, two steps of frying is not needed. Once can add all needed ingredients in a single round of frying. Making pohe is very fast. Dry pohe or flattened rice does not require refrigeration. They can be rehydrated in few minutes and subsequent cooking time is very short.

Soak Pohe

In a collandar or strainer, add pohe, wash and let them sit for 5 min. Gently stir and add more water. Let ht sit for 5 more minutes.

Saute Pote

In a pan, heat oil, add fennel seeds, simmer, add peanuts, fry, add onions, fry until transparent, add chili, potatoes, peas, cover and cook until potatoes turn soft. Add pohe with salt, turmeric, stir them inane cover to steam for another 2 min.
