Tortilla-Lined Baked Frittata

    Breakfast should be a balanced meal. Here is a recipe that covers many food groups, eggs, vegetables, bread and cheese. Each serving has 2 eggs, healthy amount of vegetables, some cheese and 1/3 of whole-wheat tortilla bread.
    Vegetables are sautéed with very small amount of oil in a shallow frying pan and mixed with eggs, tomatoes and cilantro. Mixture is poured onto a cake baking pan, over a whole-wheat tortilla. Added sprinkle of cheese makes it complete. Subsequent baking of this makes a delicious frittata, healthy breakfast item, pizza-like appearance as well as crispy bottom and quiche-like taste without the flour-fat-eggs unhealthy bottom. Eggs require delicate cooking, they are delicious undercooked but terrible when overcooked. Unfortunately, overcooked eggs are common in chain breakfast restaurants as well as in kitchens where amatures try making them home and when they do not come out good, give up cooking. Yet, once learned, eggs are also the one of the easiest things to cook. Frittata is probably a Italian – Spanish / Hispanic way of cooking eggs. If I reinvented or ruined any authentic recipe, my apologies. I may have reinvented this way of cooking eggs on my own by covering my omelette on low heat because of nature-call break after starting to cook my breakfast.

    Saute Vegetables

    Chop and dice all needed ingredients. Add onions, chilis and vegetables in oil in a pan and medium cook them, add salt and pepper to it.

    Prepare eggs

    Crack eggs, whip. Add salt, pepper, sauted vegetables, tomatoes cilantro and mix thoroughly. Optionally add 3 TBSP club soda. Mix.

    Pour and Bake

    Line a cake pan with parchment paper, optionally coat with oil, put tortilla in the bottom. Add egg and veg mixture on top, line it with cheese. Bake at 375 F for 15-25 minutes depending upon thickness of pan and sit movement in the oven/toaster. Check with a fork, cook until it is not runny.
